You guys— I just made these Eggplant Fritters to have with lunch today and tomorrow and they are DELICIOUS oh so delicious.
To make them Paleo-friendly I substituted 1/2 cup almond meal for the bread crumbs, and 1 tablespoon finely shredded unsweetened coconut in place of the parmesan cheese. I also cooked them in olive oil and not canola oil. TRY THESE!
(I’m eating mine plain, without vinegar or frisee).
